Beef source without a fridge!
Beef jerky is the ultimate outdoors food. It is a source of lean meat
without the need for a fridge and is easily stored and is light and
highly durable when on the hoof!
Despite the fact that you can buy the best jerky around here on our
web site we've put some good old fashioned recipes here for you to
try yourselves at home. We still make our own jerky in the oven from
time to time and it's a great hobby when you have the time and inclination.
Be careful when making jerky yourself as it is not always easy to
ensure a proper cure has been done.
Some recipes I have tried
1. Nice'n'spicy..
2Kg top round steak
marinate in mixture of
1/2 cup water
1/4 cup worchestershire sauce
2 tsp coarse ground black pepper
1/4 teaspoon cayenne pepper
3/4 tsp garlic powder
1/3 tsp onion powder
1/4 tsp ground nutmeg
1 tsp salt marinate overnight
put in food dehydrater 57-60 degrees Centigrade until dry or in the
oven set really low.
2. Salty Jerky
2 cups soy sauce (Kikkoman is a good brand)
1/2 cup water
1/4 cup lemon juice
1/4 cup worchester sauce
1 tablespoon liquid smoke
1 1/2 teaspoon Tobasco sauce
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/3 teaspoon cayenne pepper
2 teaspoon Schilling Caribbean Jerk seasoning (I recommend using mostly
Schilling products)
1/4 cup sugar
1/4 cup salt
1 cup of red cooking wine
Directions
Cut beef or game into about 7mm to 8mm slices
To make the marinade, mix all the ingredients except the wine and
the meat in a pan and heat them until the salt and sugar are dissolved
Put the mixture in a bowl and let it get cold
When the mixture is cold, stir in the wine. The marinade is ready
for the meat
Put the meat in the marinade and let it sit a long time. 24 Hrs is
about right.
Dehydrate the meat following your dehydrator's instructions or in
the oven set low while keeping a good eye on matters!
3. Spicy jerky
3/4 cup Worcestershire sauce
4 tbsp liquid smoke
1/2 oz bottled garlic juice Or liquid from two garlic cloves
1 level tsp salt
1/3 cup dark brown sugar
1Kg lean meat (top round is good)
Course ground black pepper
Hot sauce (optional)
One teaspoon of hot sauce will make a spicy jerky and you can make
it even more so with extra if you like.... I like!
